May Foodie Pen Pal

I am in love with Foodie Pen Pal!!!!! I enjoy getting packages in mail especially ones that contain sweet goodies. More than recieving packages, I really enjoy sending one to my pen pal. This month Alexis Pearson was my foodie pen pal. Alexis and her brother picked out some local favorites. She sent root beer flavored licorice, Amish noodles, smore's trail mix, orange flavored yogurt covered pretzels, and  really cute animal print cupcake papers. The package could not have arrived at a better time!!! I ate the pretzels while packing for my trip to Costa Rica. The licorice helped my ears pop on the airplane. And the smore's trail mix came in handy for a snack at the healthy spa we were staying at for 5 days. I am looking forward to making a meal with the Amish noodles real soon.

My first tall cake

I finally have learned how to make tall stacked cakes :)  

I have learned so many cake decorating techniques over the past 4 months through the Wilton cake classes at my local Micheal's store. Creating this tall cake was my final project. Though I am happy to now have Thursday nights free again, I will miss attending cake class. Next step, finding people to now eat all of this cake.




Oreo Truffle Cupcakes



If you love Oreo cookies and cupcakes, then this is must try recipe for you! Love from the Oven posted the recipe for Oreo truffle cupcakes The cupcakes have an Oreo truffle in the middle. If that is not enough, then she tops it with frosting containing crushed Oreo cookies. I will for sure be making these again!!!!

Strawberry Crumble Bars

I am in love with  Sweet Pea's Kitchen  recipe for strawberry crumble bars!!!! You use fresh strawberries in the filling. To give the crumble bars a richer taste, I use European style butter.

Malted Waffles

Malted Waffles



 I almost ran out of time this week to make the  Baked Sunday morning tasty treat. The recipe this week was to make Malted Waffles from the cookbook: Baked Explorations by Matt Lewis and Renato Poliafito. I strongly encourage you to purchase the cookbook, but you may also find the recipe on Baked Sunday Mornings.


I made one change to the recipe. Instead of using malt powder, I used finely ground malted milk eggs.  





I did not have a waffle iron, so on my search, I found this Nordic Ware mini square waffle pan   on clearance at a local store. It took a little practice, but luckily only  a few ended up in the garbage. I am still trying to find the best way to flip the waffles.

My fiance and I enjoyed the malted waffles for breakfast. I like the slight chocolate taste the candy eggs added. Maple syrup was an added bonus as a topping for the waffles. I will defiantly make these again.
